Tokyohana does teppanyaki or hibachi (food bring cooked in front of you)!! And it's way better then Benihanas!!

There's always Macaroni Grill. There is an open kitchen and you can see the chefs working. It isn't quite at your table, but not bad.Restaurant question in houston?

For Japanese, there is also HB Steakhouse (Happy Budda), which is all over Houston. There are also Kyoto's (Woodland and Memorial City), Asian City (Humble). Various sushi bars will also make sushi in front of you.
As for American, the best one is Brennan's, which has a kitchen table, where you literally sit in the kitchen and watch the chefs cook. If you are so inclined, you can get up and go watch them cook over their shoulder when you are sitting there - the VIP area.
Another great place is called Chef Table at Bella Terraza. Bella Terraza is a catering reception place on Chimney Rock between Westheimer and Richmond, and they have a Chef Table in the kitchen, where the chef will cook in front of you as you sit in this huge table and being served, literally from the stove to your plate.
There is also a chef table at PF Chaing's at Highland Village. It is not as close to the kitchen a s Brennan's, but still fairly close.
Pesce's has an area of cooking in the middle of the restaurant, but they only cook certain things there. However, if you order the whole fish, the waitress will literally cut the fish in front of you in the table side.

You could go to a variety of places. If you want to go to a diner type restaurant, you could sit at the bar at Telewink's off Telephone Rd for some of the best breakfast around town for under $6! Or you could go to a place like At The Border where you could see the cooks grilling your food or at Johnny Carino's where you see the chef cooking your food (at a distance, but still)
Try "Tokyohana Grill and Sushi Bar." They have a few locations in Houston. I recommend the North Freeway location, it's the newest. This restaurant serves Japanese fare off the teppanyaki (aka hibachi) in a communal setting. They add fun to your food and entertain you while your meal is being prepared before you. There's an array of sushi available and you can be seated at individual tables, depending on your dining preference. And, unlike so many other traditional Japanese operations, you can also enjoy a rather extensive dessert menu.
The evening ambiance is very cozy. They have a plush cocktail lounge and they also have dancing/live band/DJ on certain nights. Give them a call for more info 281.877.8744.
